Olivier is a traditional Russian salad and it’s been one of my favourite dishes ever since I was a child. Normally, you put meat in it, but that’s really not necessary and I actually prefer it without any.
Okay I admit it, this salad is not the healthiest thing out there, but it’s delicious and very filling. If you’re looking for a light and easy dinner, or if you just like to try dishes from other countries, this one is perfect for you.
Here’s what you need:
- 1 medium-sized potato
- 1 medium-sized carrot
- 1 egg
- 2 small pickles
- a tbsp of canned peas
- dill to taste
- mayonnaise to taste
- salt to taste
Cook the potato and the carrot unpeeled for 20 minutes, and the egg for 6 minutes. Afterwards, let them cool and in the meanwhile cut the pickles into small blocks and add the peas to them. Peel the other three ingredients and cut them into small blocks too. Now add some dill, salt and mayonnaise to taste.
Generally, Olivier requires quite a lot of mayonnaise, but we all know that’s not good. So, I would suggest to start with little and just keep adding until you like how it tastes. Mix all the ingredients well and put the salad in the fridge for a couple of hours before serving.
